Larry,
As I recall, Rutan stated that the wing attach fittings should not be covered on the VariEze because of the potential corrosion problem. A considerable amount of discussion about this issue subsequently ensued (cover, no cover, vent, no vent, etc., etc.). For example, one of the better suggestions was to use clear plexiglass to allow fitting inspection before every flight.
Personally, I have kept my fittings buried in grease and covered with fairly tight, but not perfectly sealed covers and opted not to take the "no-cover" advice since I have never had water in the fittings or any signs of corrosion in 24 years/1930 hours of operation. My plane, however, is located in a relatively dry climate and kept in a hangar. Your mileage may vary, so it's up to you to inspect and decide what to do - as you are currently in the process of doing.
So here's a suggestion. Go to the Canard Aviators Archive off of the EZ Squadron home page. Sign up as a member so you can log in and then do a search. I used "attach and wing and covers" to come up with gobs of relevant articles. Since the archive contains about 20,000 posts, a search there FIRST often will give you the information that you are looking for and will save some of us from re-answering a question that has been heavily thrashed out in the past. Try different search words, as required, to home in on what you want.
[BTW, this 'search the archives first trick' will work for anyone, so how about you other guys giving it a try too!]
Best,
