Hangar Flying / Weight limiting factor

I've read the owners manual for the Long-Ez and saw the max gross weight (1325lbs with special conditions for 1425lbs). Does anyone know what the limiting factor is on those numbers? The Infinity Gear page says that a "main landing gear carrying capability, from 1325 lbs. to 2200 lbs., by changing to the Infinity 1 Main Retract System" is achievable - Is there something else that limits the max weight of a long-ez or is the fixed gear the limiting factor?
Also, I'm a new Long-Ez owner and I'm looking for suggestions on a gap filler between the wing and strakes - it looks like some type of tape was used in the past, but it was removed (probably during the annual condition inspection). Is there a recommended "gap tape" or would something like a silicone caulking that works well?
