Well I've gotten a chance to look at some varieze's and I have a couple more questions.
1. Can anyone recommend a good insurance company for EZE's? I am a low time pilot (70 hrs), and would like to purchase a varieze or long ez. I've tried Avemco and EAA, with no success.
2. Does anyone know of a CFI in Tennessee, Alabama or Georgia that can check out pilots in a varieze?

Unlike auto insurance, Most aviation policies are custom written. What this means is, you can often "Negotiate" with the underwriter as to the specific language (terms) of the policy;
For example; Instead of the policy reading "minimum, 5 hours Dual". get the language to read "minimum, 10 hours time in type".
5 hours dual may not seem like a lot, BUT, finding a CFI with Canard Time, can be a challange. However, if you can find a Canard Pilot close by (perhaps someone that will ferry the plane with you) That pilot can act as PIC while you build your 10 hours of "in Type". This is easy to do, simply have the transition / traning pilot named on the insurance policy. I've done this many times.
I present this argument to the broker; - Would you rather have me get signed off by a CFI who has ZERO time in a canard, and odds are, I know more about the plane than he does,
OR,
would you rather insure a high time Canard pilot (none CFI) who'll provide me with transition training in the aircraft.
