Hangar Flying / FAA registration question

I recently bought a stripped down (no engine, no instruments) Varieze with no documentation. It appears to be well made. The previous owner from whom I bought it (and who did not register it), knew the original 'N' number. I looked it up: the plane had been registered originally about 30 years ago and then was decommissioned a few years ago.
What is the easiest path to getting it into my name, with a new or same 'N' number? I assume I cannot get the repairman's certificate? Or, is there some way that I can do that?  It looks like it would have to be an 'Experimental-Exhibition', according to a recent EAA article. However, I'm not certain if that is correct.
I want to make a few modifications including installing an electric noselift that I currently have in my Cozy IV project. I'd also like to make a Roncz canard for it.
